Week 5: Vegan Thyme Rolls & Vegan Bourbon Whiskey Caramelized Onion Dip – A Compassion is the Secret Ingredient Thanksgiving

Can you believe it’s already week 5, y’all? Let’s see… what are we missing?? A bread, an appetizer, and desserts, right? Well, this week I’m serving up the bread and the appetizer, and next week I will wrap this whole thing up with the desserts! But, back to this week…

I will admit that, for the longest time, I was deathly afraid of making any kind of bread. (What an odd thing to fear, am I right?!) I assumed it was far too complicated to make your own yeast-y beast but, after actually giving it a go one time, I found out that making bread is not so much complicated as it is simply a little time consuming. Homemade bread though, is so worth the time it takes to make and so, for our Thanksgiving feast, I knew that homemade rolls were a must. I began working on a recipe for rolls that would compliment the other flavors of the meal but be able to stand on its own should you want to eat it by itself. What I ended up with were these soft little rolls with a little dried thyme in them which makes them taste herbaceous and earthy.

The rolls get started the same way that most breads get started -with a yeast base! In a large bowl, some warm water gets combined with a packet of active dry yeast and a little agave. The mixture gets a good stir and then it’s left to rest until foamy -about 5 minutes. Next, almond milk, olive oil, vinegar, dried thyme, and salt are added and that all gets stirred together. The last things to be added are all-purpose flour and whole wheat flour. The dough gets worked with a spatula until combined then you’re going to pick up the dough ball, drizzle a little olive oil into the bowl, then return the dough ball back to the bowl -this oiling of the bowl helps the dough not stick to the bowl as it rises. Pop the bowl with the dough into your microwave or cover with a kitchen towel and let it rise for an hour.

After an hour has passed, dump your dough out onto a floured surface and work, adding more flour as needed, until smooth -this should only take a minute or so. Using a sharp knife or kitchen scissors, cut off a little chunk of the dough and roll it between your palms to form it into a ball that is roughly 1 1/2 inches big. Continue cutting off pieces of dough and forming it into little balls until no more unformed dough remains -you should end up with about 20-22 balls. Drizzle some olive oil over the dough balls, rubbing it around them if need be so that they are coated in it, then pop the dough balls onto a parchment lined sheet pan with just a little space left in between each. Place this pan into your microwave or cover with a kitchen towel and allow the dough balls to rise for an additional 30 minutes. (Told you, not so much complicated as it is time consuming!)

After 30 minutes, transfer the sheet pan to a preheated 400 degree oven and bake for 15 minutes or until the tops are golden brown and the bottoms are just a little browner than that. Remove the rolls from the pan immediately so that they don’t continue to brown on the bottom. If making the rolls a day in advance, be sure to let them cool completely before transferring them to a storage container or bag.

Vegan Thyme Rolls

Ingredients

  • 1/4 cup warm water
  • 1 packet active dry yeast (the “original” kind)
  • 1 1/2 tablespoons agave
  • 1 cup unsweetened almond milk
  • 2 tablespoons olive oil + more for bowl and formed rolls
  • 1 tablespoon vinegar
  • 2 teaspoons dried thyme, crushed in palm of hand before using
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour + more for board
  • 1 cup whole wheat flour

Directions

  1. In a large bowl, combine the warm water, yeast, and agave together then let this mixture rest until foamy -about 5 minutes. Next, add the almond milk, olive oil, vinegar, dried thyme, and salt then stir to combine. Lastly, add in the all-purpose flour and whole wheat flour and work until dough ball forms. Pick up the dough ball, drizzle a little olive oil into the bowl, work some of the oil up onto the sides, then return the dough ball back to the bowl. Pop the bowl with the dough ball into your microwave, or cover with a kitchen towel, and let it rise for 1 hour.

Okay, appetizer time! I have a rule about appetizers on Thanksgiving day and that is do not go crazy with them. Why? Because, while Thanksgiving is a food-centric holiday, it is not about the appetizers. The last thing you want to do is fill up on an appetizer smorgasbord and then not be able to fill up on the big meal or the desserts, right? So pick a single app or a couple of apps but no more than that.

One of my favorite go-to apps is something I like to call bourbon whiskey caramelized onion dip. If you’re only doing a single appetizer then I highly suggest it be this because, simply put, it is damn fine. Vegan “cream cheese” serves as a base for oodles of caramelized onion goodness with a hint of bourbon whiskey to it. Served with mini toasts, plain pita chips, or veggies, it is addictive and loved by all who try it -even people who don’t like booze or onions!

It all gets started with you cutting 2 large white onions into strips. Toss those strips into a large skillet (the bigger the better) with a little vegan “butter,” and some salt, and cook ’em for 10 minutes over low-medium heat, stirring occasionally. After 10 minutes, add in a little brown sugar and some agave then continue to cook the onions until richly browned (aka caramelized) and super tender -about another 10-20 minutes, stirring occasionally. When the onions are done, turn off the heat and pour in a couple tablespoons of bourbon whiskey. With a long lighter, light the bourbon whiskey on fire and allow that to cook off completely. When the flame has fully extinguished itself, add a couple more tablespoons of bourbon whiskey and repeat the lighting/burning process a final time.

When the final bit of bourbon whiskey has extinguished itself, carefully (cause they’re hot) scoop out the caramelized onions and transfer them to a cutting board. Finely chop the onions so that they are in much smaller pieces then set them aside for use in a minute.

In the pan that you cooked the onions in, turn the heat back on and bring the pan back up to low-medium heat. Toss in some vegan “cream cheese” and stir, as best you can, the “cream cheese” around until it starts to melt. Add in the caramelized onions you chopped up a moment ago as well as some black pepper then stir to combine. Once thoroughly combined, turn the heat off and transfer your dip to a serving dish.

Vegan Bourbon Whiskey Caramelized Onion Dip

Ingredients

  • 2 large white onions, cut into thin strips
  • 4 tablespoons vegan “butter”
  • 1/2 teaspoon salt
  • 2 teaspoons brown sugar, packed
  • 2 teaspoons agave
  • 4 tablespoons bourbon whiskey, to be added 2 tablespoons at a time
  • 2 1/2 (8-ounce) containers of vegan “cream cheese” (20 ounces in total)
  • 1/4 teaspoon black pepper

Directions

  1. Cut onions into thin strips if you haven’t done so already. Preheat a large skillet to low-medium heat. Add in “butter” and allow that to melt. Vegan Circle City Chili

Chili is one of those dishes that can be made literally a gazillion different ways. There’s thin chili, thick chili, spiced up chili, spicy chili, meaty chili, veggie chili, white chili, green chili… you get the picture. With so many different varieties, some might wonder which is the best and the truth is, as with almost any food out there, it’s all just a matter of personal taste.

While you might love a chili so spicy that your tongue falls out, someone else might love something a bit more mellow. There is no perfect, best, or “right” chili recipe that works for every single person but there is however that one recipe that you go to again and again because your mouth just can’t get enough of it. For me, that one recipe would be my Circle City Chili. It’s thick, dark, slightly sweet, not too spicy, and a little smokey. If your taste for chili is simpatico then you’ve come to the right place, my friend.

It all gets started with some prep. (This is the most laborious part of this recipe but you can do it because you’re fucking amazing!) You’ll need to small dice half of a white onion, half of a green bell pepper, and half of a red bell pepper. You’re also going to cut up 6 tomatoes -yes, fresh tomatoes! No canned tomatoes for this recipe!

The best way that I’ve found to get those tomatoes broken down is to put them into a pull chop container. I cut the tomatoes in half or in 3rds so that they’ll fit into the pull chop container and then give the cord about 8-10 pulls. You’ll want to transfer the tomato pieces and their liquid into a bigger bowl so that you can then repeat the pull chop process with the rest of the tomatoes.

After you’ve prepped the veg, you’re gonna get cookin’ some veg. In a large coverable pot or cast iron dutch oven, heat some oil up on medium heat for a minute or two. Add in the onion, green bell pepper, and red bell pepper, then cook this trio for 10 minutes, stirring occasionally.

After 10 minutes has passed, it’s time to add in everything else -2 different kinds of beans, the tomatoes we prepped earlier, frozen corn kernels, water (or a little water and a little ale or beer, if you’re so inclined), tomato paste, and a whole bunch of seasonings. Give the chili a good stir to ensure it’s all combined then cover the pot and cook for 30-40 minutes on low-med. or medium heat -the chili should be bubbling pretty good but not boiling. Be sure to stir occasionally.

When the chili is done it’ll be darker in color and thicker than it was 30-40 minutes ago. Serve it up with your favorite toppings or just enjoy it all by itself -either way, you can’t go wrong!

Vegan Circle City Chili

Ingredients

  • 6 medium size tomatoes
  • 1/2 of a white onion
  • 1/2 of a green bell pepper
  • 1/2 of a red bell pepper
  • 1/4 cup oil
  • 2 (15-ounce) cans of low-sodium black beans, drained and rinsed
  • 2 (15-ounce) cans of low-sodium kidney beans, drained and rinsed
  • 1 cup frozen yellow corn kernels
  • 1/2 cup water (or 1/4 cup water + 1/4 cup ale or beer)
  • 2 tablespoons tomato paste
  • 3/4 teaspoon paprika
  • 3/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon chipotle chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cumin
  • 1/4 teaspoon sugar
  • Toppings (optional)

Directions

  1. Cut the tomatoes in half or in 3rds so that they’ll fit into a pull chop container. Place 3 or 4 tomato chunks into the container then give the cord about 8-10 pulls. Transfer the tomato pieces and their liquid into a bigger bowl or container so that you can repeat the pull chop process with the remaining chunks of the tomatoes. Set the prepped tomatoes aside for use later then small dice the onion and bell peppers, making sure to remove the seeds from the peppers.
  2. In a large coverable pot or cast iron dutch oven, heat the oil up on medium heat for a minute or two. Add in the onion, green bell pepper, and red bell pepper, and cook for 10 minutes, stirring occasionally.
  3. After 10 minutes, add in the remaining ingredients. Give the chili a good stir to combine everything then cover and cook on low-med. or medium heat for 30-40 minutes -you want it to be bubbling pretty good but not boiling. Be sure to stir occasionally. When the chili is done it’ll be thicker and also darker in color. Serve with your favorite toppings (optional). Chili will keep in an airtight container in fridge for up to 5 days.

 

Vegan Coconut Cornbread

For those of you who don’t know this already, I have a brother named Thomas. He’s a couple years younger than me and we are two very different people. He’s a tech-savvy gamer-geek and I’m a crystal-loving, cow-hugging, artsy-fartsy free spirit. With that said however, there is one major thing that we have in common and that’s our love for food. We both enjoy cooking and baking (and eating) so our conversations are often very food centric. (Thank goodness you don’t gain weight just by talking about food!)

Our food centric conversation last week was about his upcoming birthday. I, as usual, offered to make him anything (vegan) that he wanted for dinner and he, as usual, said tofu scramble because he really loves my tofu scramble. Here’s the thing though, we both eat tofu scramble like all the damn time, so I told him that he should pick something that he doesn’t eat on a regular basis, something special, and that’s when he said he’d like some cornbread. (Of course I’ll be adding some main course to go with the cornbread, since cornbread alone isn’t dinner in my book, but I digress…)

Now, cornbread isn’t the most interesting thing ever, and y’all know I love to add my own special little twist to things, so I started to think of ways that I could jazz it up for my brother’s birthday dinner. He loves all things coconut, and I’m on a low-carb diet, so I thought that perhaps I should add in a little coconut flour. Then I thought that I should also add in coconut shreds, as well as coconut milk, to really amplify the coconut flavor. Then I remembered that I had some leftover amber ale in my fridge and figured, Why the hell not? It sounded crazy. It looked crazy on paper as I was writing it all down. But then I tried it, and had some other people try it, and there was no doubt that this crazy-ass recipe was crazy good.

My brother may not get to eat it until his birthday next week but y’all can try it right now! The first thing we’re going to do is prepare the egg replacer. For this, and most of my recipes, I use Ener-G egg replacer. In this case I took some of the egg replacer and mixed it with a little amber ale and a little water to create my “eggs.” Don’t worry if it’s a little clumpy, we’ll work those clumps out later when we add this to our cornbread batter. For now, just mix it as best you can then set it aside.

Next, in a large bowl, you’re going to combine the cornmeal with the coconut flour, all-purpose flour, baking powder, baking soda, salt, onion powder, and garlic powder. Whisk these dry ingredients together.

Now we are going to add in the wet ingredients which are coconut milk, vegan “butter” (melted), the egg replacer we made a moment ago, and a little bit of sugar. Whisk everything together once more and then we’re going to trade out our whisk for a silicone spatula.

Toss in the frozen corn kernels and coconut shreds then fold them into the batter using a silicone spatula. Be gentle and don’t overwork the batter but do make sure that there aren’t any clumps of frozen corn.

Generously grease an 8-inch square pan then pour the batter in and flatten the top, if needed, with the spatula. Pop this baby into a preheated oven and in just 30 minutes you’ll have coconut cornbread! You’ll know it’s done when the top is a lovely medium shade of golden brown and a toothpick stuck into the center comes out clean. Honey butter fan gone vegan? Try mixing a little agave with some vegan “butter” and smear that on a big ol’ piece of this cornbread for something so good your tongue will be crying tears of joy. #YoureWelcomeTongue

Vegan Coconut Cornbread

  • Servings: 6-9

Ingredients

  • 1 1/2 tablespoons Ener-G egg replacer + 3 tablespoons amber ale + 3 tablespoons warm water
  • 1 cup cornmeal
  • 1/3 cup coconut flour
  • 1/3 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon garlic powder
  • 1 (13.66-ounce) can of coconut milk
  • 6 tablespoons vegan “butter,” melted
  • 1 tablespoon sugar
  • 2/3 cup frozen corn kernels
  • 1/3 cup unsweetened shredded coconut
  • Coconut oil for pan

Directions

  1. Preheat oven to 425 degrees and prepare an 8-inch square pan by generously greasing it with coconut oil. Prepare egg replacer, if you haven’t already done so, by combining it with the amber ale and warm water. Stir with a fork or mini whisk to break up as many lumps as you can then set mixture aside for a moment.
  2. In a large bowl, whisk together the cornmeal, coconut flour, all-purpose flour, baking powder, baking soda, salt, onion powder, and garlic powder. Add in the coconut milk, melted vegan “butter,” egg replacer mixture, and sugar. Whisk just until batter is smooth and all of the dry ingredients have been fully incorporated.
  3. Toss in frozen corn kernels and shredded coconut then fold everything together making sure to break up any clumps of frozen corn.
  4. Pour batter into greased pan and bake in preheated oven for 30 minutes. You’ll know cornbread is done when top is medium golden brown and a toothpick inserted into the center of the cornbread comes out clean. Will keep in airtight container in fridge for up to a week but is best hot out of the pan.

Vegan BBQ “Pulled Pork” Sandwiches

Last week I shared with y’all my recipe for broccoli coleslaw and, upon seeing that post, I’m sure some of your minds instantly thought of barbecue. I mean sure, coleslaw is great with fried chicken (or my vegan version of fried chicken), but let’s face it, it’s most oftentimes paired up with barbecue -namely, pulled pork. So, with coleslaw and pulled pork totally being BFF’s, it was pretty much mandatory that I share my “pulled pork” sandwich recipe this week and that’s just what I’m gonna to do -but first let’s talk about carrots and sauce.

For my “pulled pork” I use shredded carrots. Yes, you read that correctly, shredded carrots. The carrots have a nice tender meaty texture when cooked and they’re the perfect delivery system for my sauce because they soak up some of it making them not just flavorful on the outside but on the inside as well. Speaking of my sauce, it’s a tomato-based sauce that’s thick, sweet, and tangy. From what I know about barbecue sauces, mine is closely related to what they call a Kansas City-style sauce so, if you’re into that style, you’ve come to the right place.

It all gets started with you peeling and washing up some large carrots. Once you’ve got those all prepped and ready to go, it’s time to shred those bad mama jama’s. You can do this in your food processor or by hand on a box grater like I did this time -it was my arm workout for the day! Either way, you’re just going to want to make sure that you do thicker shreds so that they hold up in the cooking process and provide a more meaty bite.

Place the shredded carrots into a pot of boiling water and boil them for 10 minutes. While the carrots are boiling (and turning the boiling water a lovely shade of orange), we are going to get the sauce started.

In a dutch oven or other large (and lidded) pot, tomato puree is going to get combined with amber ale, apple cider vinegar, molasses, and a few other things. Whisk everything together to break up any clumps and then bring the mixture to a full boil. Once boiling, reduce to simmer and then check on your carrots.

When the carrots are done boiling, use a strainer scoop or fine colander to retrieve them and then toss them into the simmering sauce. Stir to combine it all together.

Cover the pot and cook the mixture for 20-30 more minutes to thicken the sauce and get the carrots to their final level of tenderness. Be sure to stir the mixture occasionally and, when not stirring it, keep the pot covered to keep the moisture in. When it’s all done, serve the “pulled pork” on a hamburger bun and top it off with some of that delicious coleslaw I linked to at the beginning of this post.

Vegan BBQ 'Pulled Pork' Sandwiches

  • Servings: 4-6

Ingredients

  • 7-9 large carrots, peeled, washed, then shredded into large shreds (upon shredding, you should have about 2 generous cups worth of carrot shreds -don’t use less or more than this amount for this recipe or there will likely be too much or too little sauce for the shredded carrots)
  • 1 1/2 cups tomato puree
  • 1/2 cup amber ale
  • 1/4 cup apple cider vinegar
  • 1/4 cup molasses
  • 2 tablespoons brown sugar
  • 1 tablespoon lemon juice
  • 1/2 tablespoon paprika
  • 1 teaspoon spicy mustard
  • 1 teaspoon salt
  • 3/4 teaspoon garlic powder
  • 3/4 teaspoon onion powder
  • 3/4 teaspoon cumin
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon chili powder
  • Hamburger buns
  • Broccoli coleslaw (optional)

Directions

Vegan Bourbon Whiskey Pineapple Upside-Down Cake

Here’s the 1st of 2 declarative statements in this post: I hate pineapple upside-down cake.

Yeah, you read that right! My mom, on the other hand, loves it. It’s one of her favorite desserts so it was high time I set about making her a vegan version that would take the cake -pun intended! Now here’s the thing about my mom, it takes a lot for her to call something, “great,” or, “perfect,” but those were the exact words she used to describe this cake so you better believe it’s something to try -if you’re a fan of pineapple upside-down cake, I mean.

Ready for the 2nd declarative statement of this post? Here it is: I don’t drink alcohol -like ever.

While I’m not a drinker (by personal choice) I do like to cook and bake with certain adult beverages from time to time. I find that they can really help amplify flavor, and add complexity, when used in moderation. Now I say moderation not because you’re going to get your family and friends plastered if you use too much (the alcohol does actually cook out), but rather because people tend to not enjoy super boozy recipes. Too much alcohol, just like too much salt or any other ingredient, can ruin a recipe in a heartbeat.

“But, Heather,” you might be asking, “if you don’t drink then how do you even know what flavor you’re adding to your recipe in the 1st place?” It’s called Google, my friends. There are plenty of sites out there which help break down the flavor complexities of things like champagne, red wine, and bourbon whiskey. Some even go so far as to tell you which flavors pair well with the adult beverage you’re looking into. I also happen to be surrounded by people who absolutely are willing to take a swig of something and tell me all about it. Sounds a little sketchy, I know, but it all absolutely works and this lovely little cake is proof of that!

To get started, we need to whip up some egg replacer (my favorite, Ener-G) so that it’ll be ready for us to use in a minute. Normally I’d be telling you to follow the instructions on the box, which says to use warm water to hydrate the Ener-G, however this time we’re doing things a little differently -a little more badass, one might say. We’re hydrating the Ener-G with bourbon whiskey! Oh yeah, you can do that, and we just did. #MicDrop

Next, in a mixing bowl, the dry ingredients (flour, baking powder, and salt) get whisked together until smooth. Then I add the almond milk, sugar, pineapple juice (stolen from our can of pineapple slices), egg substitute, and the vanilla, and stir to combine. Now set the cake batter aside for a moment to prepare the pan for it.

For this cake you’ll need a 10-inch round pan. Spray it generously with nonstick spray and then, while holding the pan upright, sprinkle a little flour around the edges of the pan. The goal here is to have the bottom of the pan greased and the sides both greased and floured to prevent the cake from sticking.

In the bottom of your prepared pan you’re going to pour in some melted vegan butter. Swirl it around the pan to make sure it sits evenly in the bottom then add in the brown sugar ensuring that it too is even across the pan. On top of that goodness, lay down the pineapple slices and, in the center of each, a maraschino cherry.

Now grab the batter we made earlier and gently pour that into the pan. Get your cake into a preheated oven and bake it for about 45 minutes.

You’ll know it’s done when the edges are pulling away from the sides of the pan and the top, soon to be bottom, is golden brown. Let the cake rest in the pan for 5 minutes.

After 5 minutes has passed, it’s time to turn that bad boy out! My preferred method for doing this is to sandwich the cake pan in between to large sheet pans with the sheet pan the cake is about to be flipped onto lined in parchment paper. Pinching the sheet pans tightly together so that the cake pan cannot move in between them, give the whole thing a quick flip then carefully remove the top sheet pan and the cake pan to reveal your upside-down cake!

Vegan Bourbon Whiskey Pineapple Upside-Down Cake

Ingredients

  • 1 tablespoon Ener-G egg substitute + 1/4 cup bourbon whiskey
  • 1 1/2 cups flour + more for pan
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup unsweetened almond milk
  • 3/4 cup sugar
  • 1/4 cup pineapple juice (from can of pineapple slices)
  • 1/2 teaspoon vanilla
  • 2 tablespoons vegan butter, melted
  • 6 tablespoons brown sugar, packed
  • 7 slices of pineapple (a 20-ounce can will provide more than enough slices and juice for this recipe)
  • 7 maraschino cherries
  • Nonstick cooking spray for pan

Directions

  1. Preheat oven to 350 degrees. Prepare egg substitute by combining Ener-G powder with bourbon whiskey. Stir well then set aside.
  2. In a mixing bowl, combine 1 1/2 cups flour with baking powder and salt. Whisk until smooth then add in the almond milk, sugar, pineapple juice, egg substitute, and vanilla. Whisk to combine then set aside.
  3. Prepare a 10-inch round pan by spraying it with nonstick spray then, while holding the pan upright, sprinkle a little flour around the inner edges to coat just the edges (not the bottom) lightly with flour. Shake out any excess flour.
  4. Pour melted vegan butter into pan. Swirl it around in the bottom of the pan to ensure an even layer and then sprinkle in the brown sugar, by hand, also making sure that it is even across the bottom of the pan. Lay down a layer of pineapple slices (7 slices to be exact) in the bottom of the pan and then place a maraschino cherry in the center of each pineapple ring. Gently pour cake batter into pan then bake for 45 minutes. The cake will be done when edges are pulling away from pan sides, cake top (soon to be the bottom) is golden brown, and a toothpick stuck halfway down into the center of the cake comes out clean.
  5. Let finished cake rest in pan for 5 minutes. After 5 minutes, turn cake out being very careful as it will still be very hot. (Read in post about how I prefer to do this!) Cake will keep in an airtight container on counter for up to 3 days.
