A few years back I found out the secret to amusement park/bakery style rice crispy treats and that secret is sweetened condensed milk! In mine I use sweetened condensed coconut milk (vegans also have the option of sweetened condensed oat milk now too). Now, if you just wanted “normal” rice crispy treats you could stop there and they’d be absolutely delish, but why not add a little spice? Some cinnamon gives this recipe a gentle kick and makes it perfect for this time of year when we’re transitioning to fall but it’s not quite fall yet. You could even play around and do an apple cinnamon version by adding some dried apples. Or perhaps you’d like a pumpkin spice version? Vegan Cinnamon Rice Crispy Treats
Ingredients
- 1 stick (8 tablespoons) vegan “butter”
- 1, 11.25-ounce can (3/4 cup) sweetened condensed coconut milk
- 1, 10-ounce bag Dandies marshmallows
- 3/4 tablespoon cinnamon, not heaping
- 1/4 teaspoon salt
- 1, 12-ounce box (8 cups) rice crispy cereal
Directions
- Prepare a 9×13 pan by lining it with parchment paper – you will need more parchment paper for the top so don’t put it away just yet. In a large pot or dutch oven, melt the vegan “butter” over low heat. Give the can of sweetened condensed coconut milk a good shake then open it and add it to the melted “butter.” Also add in the marshmallows. Increase the heat to medium and cook this mixture until the marshmallows have melted in and it’s a smooth consistency, about 7-10 minutes, stirring constantly.
- Turn off the heat and add in the cinnamon and the salt. Stir to combine. Lastly, add in the rice crispy cereal. Stir very well to combine. Dump the mixture out into your prepared 9×13 pan. Use a spatula to smooth the mixture out evenly into the pan if needed. Grab another piece of parchment paper and lay it across the top of the mixture. Being careful because it’s hot, gently press the mixture into the pan, giving it a flat top surface. Cover the pan and place in the fridge for 1 hour to cool and set.
- After 1 hour, remove from the fridge and cut into 12 even treats. Treats will keep in an airtight container on the counter for 3-5 days.
